Jam Doughnut Muffins from The Cook & Enjoy Baking Book

Jam Doughnut Muffins from The Cook & Enjoy Baking Book

I've had this book by Parragon Books for a couple of months now.  I received a mystery parcel from them - I knew it was a recipe book, but I didn't know the title until it arrived for review.  It's called Cook & Enjoy Baking and it contains 100 recipes for the everyday cook.

Inside you will find a selection of pretty simple recipes for cakes, small cakes & slices, cookies, desserts, bread & savouries.  I enjoy baking, when I make the time for it, and of course, the kids are always raring to go.

After a quick flick through, I decided that I would give the Jam Doughnut Muffins a try, mainly because I already had the ingredients in the cupboard and fridge and I didn't want the distraction of a shopping trip.

The Jam Doughnut Muffins had a difficulty rating of medium, but I found them really easy to make even with the extra pairs of hands I had helping me.  The book also gives preparation and cooking times, which is always handy if you are short on time, preparation wise.

I really liked the appealing full page picture which shows the finished product too.

So how did we find the recipe?

It was easy to follow the 5 simple steps to get to the oven ready stage.

I put them in the oven for the recommended time and tried to keep my eye on them.  I have a fan assisted oven and the book only gives the one time of 20 minutes, where you usually have two times for both oven types.  Anyway, when I turned them out of the muffin tin, they were darker than the picture, but not burnt.

I was happy with how they looked inside.  Not too dis-similar to the ones in the picture.

I must admit that I wouldn't make these again though.  They didn't taste that great.  They tasted like scones rather than a doughnut and didn't even have the consistency of a doughnut either.  The kids ate a couple of them, and the rest ended up in the bin a few days later.

Harry has spied a rather nice cookie recipe though, so perhaps we'll have more luck with that!

The price on the back cover of this book is £14.99.  It is available from all good book stockists.  You can grab a copy for £5.00 from The Works, if you're lucky. Bargain!

Do you enjoy baking with the kids?
